Kyllingesalat med sursød sauce

Her er en dejlig let og sund kyllingesalat, der er inspireret fra det asiatiske køkken. Det er især fiskesaucen, riseddiken, mynten og korianderen, der får denne ret til at smage af Asien. Inden du servere salaten, så husk at vende den godt rundt, og drys med mynteblade og hakkede peanuts. Server den sursøde sauce til i små skåle. Der er cirka til 4 personer i denne portion.

Ingredienser

  • 2 kyllingebrystfileter (uden skind og ben)
  • 4 spsk. fiskesauce
  • 4 spsk. saft af en limefrugt
  • 1 spsk. sukker
  • Friskkværnet peber
  • 1 lille rød chili
  • 2 gulerødder
  • 1 løg
  • 2 spsk. mynteblade, hakkede
  • 2 spsk. korianderblade, hakkede

Sursød sauce:

  • 3 fed hvidløg
  • 3 milde, røde chilipebere
  • 1 spsk. sukker
  • 3 spsk. fiskesauce
  • 3 spsk. (ris)eddike

Pynt:

  • 1 lille bundt frisk mynte
  • 2 spsk. saltede peanuts

Fremgangsmåde

  1. Kom kyllingekødet i en wok eller en bredbundet gryde, og dæk med vand tilsat 2 spsk. fiskesauce
  2. Kog kødet ved svag varme i ca. 10 minutter. Det skal være helt gennemkogt
  3. Tag kødet op, og lad det køle lidt af
  4. Rør en marinade af 2 spsk. fiskesauce, limesaft, sukker, peber og finthakkede chili
  5. Skær hvidkål i smalle strimler. Skræl gulerødderne, og riv dem groft. Hak løget
  6. Vend de nævnte grønsager rundt i marinaden i en stor skål
  7. Tilsæt kyllingekødet skåret i strimler, mynte og koriander
  8. Stil skolen i køleskabet mindst 2 timer, så det hele får lov at trække smag fra marinaden
  9. Sursød sauce: Pil hvidløgsfeddene. Fjernkernerne fra chilierne, og skær chilierne i tern
  10. Stød hvidkøg, chili og sukker i en morter
  11. Rør fiskesauce og riseddike i sammen med 6 spsk. vand
  12. Smag saucen til med sukker
